creativity in a lunch box

Ok so in hopes to save money, and eat healthy I have been taking my lunch to work everyday.  It has been fun at times to work on my creativity with new healthy menus, but there is only so many options one can create while on a budget. In the hope to eating healthy I also try to only have my "bread" I enjoy spelt bread one time per day, so this also means I have to plan ahead, because if I want something with bread (spelt) for breakfast then the night prior I need to pack a lunch that does not include bread. That means no sandwich.   So this is were the small frustrations come into play, because I will normally pack a fruit, veggie and sandwich, but one can only eat the same kind of sandwich day after day.  Especially when the structure to a great sandwich is of course cheese and because of my allergie to dairy that means no cheese unless I am able to splurge and buy not so cheap Goat Cheese (this does not happen to ofter).  Now there is always the joy of leftovers and for the most part they are always a good thing, but when one lives in a house were I am not always the one cooking dinner, there is not always enough made for leftover.    So now I have decided that I am on a mission to not repeat a type of sandwich more than once a month. Yes I might have to repeat types of meat or other ingredient on my sandwich, but I will try to be creative with flavors and add ons.. so stay tuned for future post on what has ended up in my Wheat free and Dairy Free lunch box.  as for tomorrow....I have leftover salad, nut clusters and a turkey, lettuce, and broccoli slaw sandwich.

wanting a menu with choices!!!

This being my first post I thought I would give you a small look into my world!  So not choosing but having to eat  Wheat free and dairy free means many things. First any time I eat out or buy food I have to read labels and ask questions.  Now you are probably thinking that there are a lot of choices out there for Gluten Free...AND.....Dairy Free people, and yes this is true, but try finding foods to eat that are BOTH!!! This is were the menu and grocery store choices are limited. Wheat and dairy are hiding in so many food!! They work as filler or thickeners. Even today I stopped by a local coffee shop because I was craving a Chai Latte and at most places as long as they have soy or rice milk a Chai (black tea) latte is ok but I always ask anyway! I am glad I did because there house chai has a small amount of milk in it to make it so creamy and thick! This means NO Chai for me! Ugh!!!

Ok so no worries I do still eat! I am not a picky eater and my husband is a amazing chef, and I still love to eat fruit and veggitables and I am not vegan...I enjoy eating meat, but this is were being creative is a must because eating a diet that is all meats, fruits and veggies is not cheap, and many recipes and milk, butter and flour! well as I said in the begin this was a small look at my frustrations!!
